(1)Thick cut london broil or flank steak, 3-3.5 lbs.
(3)TBSP brown mustard
(1 TSP) dry mustard
(1/2)TSP sea salt
(1) TSP onion powder (1/2)TSP Garlic powder
(1/4)TSP Fresh ground black pepper
(3) TBSP Butter
(1.5) TBSP Fresh minced parsley
(1) TBSP Fresh lemon juice

Cooking Instructions:
Score meat in a criss cross fashion on bothe sides. Make a paste of the mustards, salt, onion/garlic powder and pepper. Rub thouroughly into the meat. Wrap in plastic wrap and refrigerate overnight. 1 hour before cooking, remove and let come to room temperature. Prepare a "hot" grill fire over coals (hot is when you can only hold your hand 1 inch from the heat for about 2 seconds). Grill about 5 minutes per side about one inch from the heat. Control flare ups.

Serving Suggestions:
Melt butter, mix with lemon juice and minced parsley. To serve, allow to rest, then slice thinly on the diagonal across the grain. Brush with the lemon/butter/parsley.

Goes well with a crisp green salad, and any standard steak starch. A nice Shiraz or a lighter cab for a wine.
